Louisiana Crawfish striped salad

Crawfish, healthy, low-calorie, low-fat, salad


  • 2 1/4 lbs Louisiana Crawfish tails
  • 3 lbs Mixed salad greens, chopped as needed
  • 3 cups Black olives, sliced
  • 3 cups Feta cheese, crumbled
  • 6 cups Yellow squash, small-diced
  • 3 cups Red onion, small-diced
  • 3 cups Avacado, small-diced
  • 6 cups Tomato, small-diced
  • 6 cups Cucumber, peeled, seeded, small-dice
  • 3 cups Low-fat balsamic salad dressing


  1. Prepare individual salads by mounding salad greens on individual serving plates.
  2. Line up each ingredient, then add to greens to create stripes: From left to right, add olives, feta, squash, Louisiana Crawfish tails, onion, avocado, tomato and cucumber.
  3. Serve either drizzled with salad dressing or with dressing on the side.
