Louisiana Oyster and brown rice bisque

Ingredients:

  • 2 1/4 lbs Louisiana Oysters, shucked, chopped if desired
  • 2 Tbsp Canola oil
  • 1 lb Onions, chopped
  • 2 tsp Liquid smoke
  • 5 1/2 cups Clam juice, divided
  • 3 cups 2% milk
  • 1 cup Fat-free half-and-half
  • 4 Tbsp Cornstarch
  • 3 cups Brown rice, steamed, cold
  • 3 Tbsp Original TABASCO® brand Pepper Sauce
  • 4 Tbsp Flat leaf parsley, chopped
  • 2 Tbsp Smoked paprika

Directions:

  1. Add oil, onions and liquid smoke to saucepan; cover and sweat until tender. Remove from heat. Add 4 cups clam juice, milk and half-and-half.
  2. Bring to simmer, then blend 1½ cups clam juice with cornstarch and add to the simmering liquid along with brown rice and Louisiana Oysters. Stir until slightly thickened; cook until the oysters start to curl. Add TABASCO®.
  3. Place in serving bowls. Garnish with parsley and smoked paprika.
