  • 2 1/4 lbs Louisiana Grouper, cut into 3-oz. portions
  • 3/4 cups Mango, small-diced
  • 3/4 cups Pineapple, small-diced
  • 3 Tbsp Jalapeño pepper, seeded, finely diced
  • 3/4 cup Red bell pepper, small-diced
  • 3 Tbsp Cilantro, chopped
  • 3/4 cup Red onion, small-diced
  • 1 cup Fresh orange juice
  • 1 1/2 tsp Jerk seasoning
  • 12 ea Cedar plans, pre-soaked


  1. In a bowl, mix mango, pineapple, jalapeño peppers, bell pepper, cilantro and onion; blend. Add orange juice, lime juice and jerk seasoning. Mix and hold cold until needed.
  2. Place each portion of Louisiana Grouper on a cedar plank. Place planks on grill, cooking until fish is firm and opaque, 10–12 minutes.
  3. Remove planks from grill. Place each plank on its own serving plate; top each with ¼ cup of the tropical salsa.
