ceviche-marinated grilled Louisiana Shrimp tacos

Ingredients:

  • 72 ea Louisiana Shrimp, 21-25 count, peeled and deveined
  • 3/4 cup Lime juice
  • 3/4 cup Cilantro, chopped
  • 6 cups Tomato juice
  • 3 cups Red onion, chopped
  • 3 Tbsp Ancho chili powder
  • 24 ea Corn tortillas, 6'' diameter
  • 1 1/2 lbs Red cabbage, shredded
  • 3/4 cup Tomatillo salsa, prepared
  • 3/4 cup Low-fat sour cream
  • 72 ea Cilantro, leaves

Directions:

  1. Mix lime juice, chopped cilantro, tomato juice, onion and chili powder; hold cold until needed.
  2. Marinate Louisiana Shrimp in lime juice-cilantrotomato juice-spice marinade for 10–15 minutes. Remove shrimp from marinade and place on hot grill for 1–2 minutes per side, until cooked through.
  3. Heat tortillas; place 3 shrimp on each tortilla; top each with 1 oz. red cabbage.
  4. Drizzle each tortilla with 1 Tbsp. salsa, and top with sour cream. Garnish with 3 cilantro leaves.
