Blackened Louisiana Alligator grilled to perfection, served on miniature sliders with spiced-Creole spread, lettuce, tomato and pickle chips, 405.1 calories.

  • 2 1/4 lbs Louisiana Alligator, cut into medallions 1 1/2 oz. ea., pounded
  • 4 Tbsp Creole mustard
  • 2 1/4 cups Tartar sauce
  • 3/4 cup Prepared blackening season
  • 24 ea Slider buns
  • 36 ea Roma tomato, sliced
  • 24 ea Leaf lettuce
  • 36 ea Kosher pickle chips


  1. Mix Creole mustard with tartar sauce and hold under refrigeration until needed.
  2. Toss Louisiana Alligator with the blackening spice, then place on hot grill, turning one time, until cooked through.
  3. Toast cut sides of slider buns. Spread ¾ tsp. of Creole tartar sauce on each cut side.
  4. Place 2 bun bottoms on each serving plate. Top each with tomato, lettuce leaf and grilled alligator, then close with bun tops. Garnish with pickle chips.
