salt-roasted Louisiana Shrimp with orange-honey dipping sauce

Ingredients:

  • 60 ea Louisiana Shrimp, 16-20 count, whole, head on
  • 3 cups Fresh orange juice
  • 1/2 cup Orange zest
  • 1 1/2 cups Honey
  • 1 1/2 cups Green onion, minced
  • 1 Tbsp Original TABASCO® brand Pepper Sauce
  • 4 Tbsp Low-sodium soy sauce
  • Kosher or rock salt, as needed

Directions:

  1. Mix the orange juice, orange zest, honey, green onion, TABASCO® and soy sauce; hold aside.
  2. Place ½-inch-thick layer of salt on sheet pan or oven-proof dish. Place in 500°F oven for 30 minutes. (Salt can be used more than one time.)
  3. Carefully remove salt dish from oven, and lay Louisiana Shrimp on salt. Cover with foil. Then place back in oven for 5 minutes.
  4. Remove shrimp from salt with tongs, and place on serving plates. Serve with 2-oz. ramekins of orange-honey dipping sauce. (Guests will detach the heads, peel the shells and dip into sauce.)
